Tuesday

I am so glad that it is Tuesday evening. I don’t know about you – but my Tuesday was a lot better and more productive than my Monday. I would rather forget my commute home on Monday – forever. It took me over THREE hours to get home, unfortunately because there was a serious car accident on the road I take home. I always feel so sad when such a bad accident happens – and I use my energy hoping that everyone is ok, instead of getting angry or upset that i am sitting in traffic. Thankfully I was listening to a great book on Winston Churchill – so I definitely was not completely wasting my time.

So, let’s skip Monday (I did not go to the gym – I was 100% exhausted when I got home last night! I barely scraped together a dinner for myself) and go straight to Tuesday. The energy I had on Monday night was used packing a good breakfast and lunch for Tuesday.

Breakfast was a Kashi oatmeal with fresh blueberries and a spoonful of Barney Butter:

This breakfast was very good and it let me get through the morning without having to snack. I am always a happy camper when this happens. I am hungry all the time, it seems.

I had lunch at 12:30 this afternoon. It was not pretty, but it was SO good and very filling thanks to the lean protein of the tuna:

Lunch consisted of tuna, spinach and mustard in a pita pocket and a lot of fresh and perfectly ripe strawberries. This lunch gets an A+ in my book! I did not need to eat again until 5 o’clock when I was just a few minutes away from the gym and I was so tired, and I realized that I was hungry. I tried a new PR Bar, peanut butter flavor. I really liked this bar a lot.

At the gym I did the elliptical machine for 33 minutes and then I jogged on the treadmill for 7 minutes. My right foot has been almost hurting this week – which I am pretty sure is due to a blister on my pinky toe, which is making me walk differently even though I’m trying not to. Ugh. Pain in the FOOT! My fingers are crossed that this problem goes away soon because I really need to get my runs in!

After the gym I stopped over to the market and picked up some pretty healthy things:

Spinach, reduced sodium Boar’s Head turkey, carrots, tomato, apples, red onion, Teddie peanut butter (of course!!), fresh salsa, baked blue corn chips, reduced fat Cabot cheddar cheese, and a bag of light babybel cheese. I already have a ton of Greek yogurt in the fridge, in case you were wondering 🙂

Dinner was fast and easy today:

I really do not eat microwave meals often (thankfully!) but if you are in a pinch, I really love this meal by Healthy Choice. I love the taste, I like the steam technology, the vegetables are great and it is pretty filling. After heating up, my bowl looked like this:

I had a glass of light vanilla soy milk with dinner, too. Tomorrow is going to be a super long day at work, so I have planned and packed my lunch and healthy snacks for tomorrow. Fingers crossed that tomorrow is a good day at work. I hope you have a great Wednesday, too!
