I’ll be honest with you – I was sort of dreading going back to work after a wonderful week of vacation. But so far the week really has not been that bad. The days are going by quickly and I have been busy and enjoying it for the most part. I hope this continues!
My day was really similar to yesterday as far as the items I report on for the blog. Breakfast was a really tasty coffee in the car with 1% milk mixed in. I had breakfast at 8 o’clock and it was another Lemon Zest Luna bar. At 10 o’clock I rolled up my sleeve for my annual flu shot. Fun times! I will tell you that my arm hurt (and still does) for the rest of the day. Boo. But if you have ever had the flu (especially as an adult) you know how much you want to avoid getting it during the upcoming flu season. I’ve always had good luck with avoiding the flu and have only had it once as an adult – and that was the year the flu shot got a little mixed up (do you remember??) and the flu knocked me on my butt for over a week! Yikes.
After the flu shot I grabbed my Fage yogurt and had my morning snack:
I love the 0% strawberry and the 0% strawberry and goji flavors – they are so good. I also love the honey Fage. I hardly ever use the entire “mix-in” in my yogurt, but I love the added flavor.
At noon I went for my thirty minute walk – it was windy by the water, but it was another pretty day. I just love autumn, especially in New England. Speaking of fall, and cooler weather – it was another soup day for lunch! I heated up my soup a little after one o’clock (the Fage as a mid morning snack really works for me!) and I had a ton of compliments on my soup. I guess it looked pretty good to a few of my colleagues, and thankfully it tasted good too. Unfortunately, this was the last of the vegetable soup from Sunday night:
I added spinach to the soup on Monday night – I was nervous to add it when I originally cooked the soup on Sunday, but it was my gut instinct – to add the spinach. Glad I did because it was great on Monday night and Tuesday for lunch. More green is always good, right?
I had a small piece of rosemary bread to go with the soup. I must say that I was hungry again at 2:30. I ate my peanut butter crackers (four of them) and a big apple. At four o’clock I ate my trail mix. I was a little disappointed that i needed all three of my snacks today. I think next week I will have to throw some milk, tofu, chicken or cheese into my lunch so that I have a little more protein in my afternoon meal. I think that would help take away my later afternoon starvation…. maybe?
After work I drove to the gym. I elliptical-ed for 35 minutes while I read on my nook. I cannot stop reading Gone Girl. I can’t seem to put it down! I want to rush through my blog post so that I can get back to my book! I love finding a book that is so good you don’t want to go to sleep until you finish it. Last night I had to make myself put the nook down and go to sleep – I wanted to keep reading for at least another hour. So tonight reading is a priority.
After the gym I literally ran into the grocery store, picked up mushrooms and another box of Pacific stock for yet another soup. I concocted the recipe on the elliptical and decided to give it a try. I will report more on this tomorrow when I have it for lunch. I did make it on the stove tonight. Key ingredients: mushrooms, scallions, spinach and garlic. I think it has potential – but the recipe needs the smallest change which will go into effect next time – but more on that tomorrow.
I was rather productive at home tonight, thank goodness. I have a lot of laundry to do. I managed to get one load done tonight. Sometimes it is all I can do to 1. make dinner 2. shower after the gym or running 3. figure out breakfast and lunch (and other food) for the next work day 4. do laundry if needed 5. clean up the kitchen (and the rest of the house) 6. write a blog entry 7. get some reading done 8. talk to my boyfriend and family 9. pack my gym bag for the next day 10. pick out my work clothes for the next day and finally 11. go to bed at a decent time and get at least 7 hours of sleep. It’s enough to make me crazy if I stop and think about it. So, I don’t. I just do as much as I can for any given night. Most of the time that works for me. 🙂
Dinner tonight was not as healthy as it could be. But it could have been worse – and it saved me a lot of time. My mom and a friend of hers ordered a pizza and salad last night. They brought the pizza home. I dutifully ate soup for dinner and watched them eat pizza. They also ate soup, which is how I ran out of it. SO tonight I had a big salad and two smallish pieces of pizza. Dessert was a nice, cold, tall glass of milk with a teaspoon of Trader Joe’s midnight moo chocolate syrup. So. Good. (not to mention good calcium and protein!)
I am not quite organized for the next day at work – but I am working on it. I hope you all had a great Tuesday and that tomorrow is even better. See you then!
