Wow, Happy Boxing Day, everyone! I cannot believe it has been almost a month since my last blog entry. It was all I could do to commute, work, run, cook, eat well and get enough sleep to stay healthy these last couple of weeks. It has been fun (for the most part) but I was sorry to neglect the blog and my readers for so long. Here’s to a renewed effort in 2013! (And the last few days of 2012)
Thankfully I have still been cooking some great meals. I love Smitten Kitchen’s new cookbook and made my first recipe from it last weekend. Pan seared halibut with a tomato vinaigrette (which I can’t even tell you how much I love now!) and fresh salsa. I love this recipe. That night I also made curry seasoned roasted cauliflower and broccoli along with homemade corn bread:
In the midst of December, among all of the running, holiday gatherings, gift buying and so on, we had time to pause and witness a “pretty” little ice storm:
As pretty as it looks, it made my commute to work quite an experience that next morning.
On Christmas Eve we all enjoyed wonderful food, and some particularly adorable reindeer cupcakes:
Not only were they adorable, they tasted amazing, too!
