Running Fuel

Leave it to me to decide to get back into running just in time for our first winter storm… There is something about a snow storm that makes me sleep in. If I know I don’t have work in the morning, and I know it is snowing, I will just sleep. This morning I finally got out of bed at 9:45! I felt really well rested.

For breakfast I decided to use up some ham that was left over from Christmas. I made omelettes for breakfast. My omelet had ham, scallions and a little bit of cheese and one egg. The other omelet I made (for Sous Chef) was two eggs and a lot more ham! I always make eggs with butter in the pan. I do not use cooking spray when I’m making eggs, and let me tell you – it makes the biggest difference! A little bit of butter is not bad for you.

Of course we topped our eggs with a little hot sauce – somethings never change! I had a piece of toast with my omelet, too. It was a great breakfast and I didn’t eat again until 3 o’clock – after my run.

Today I did day two of Couch to 5K (C25K). It felt great to run on the treadmill while following a program. Normally I get on the treadmill and tell myself, “I have to do this for an hour” and I just run until I can’t anymore. I love the fact that C25K helps you build up your running strength and endurance gradually – I hope I’m going to avoid over doing it and avoid re-injuring my old injuries. Yesterday I gave myself a rest day, but still did the treadmill for 50 minutes at a brisk walk. (I also took a walk outside – so I was pretty active even though it was a ‘rest’ day.)

After my treadmill time, I knew I had a lot to get done. My laundry was beeping that it was done. I had to take a shower. I had to eat. I had to clean off my car that was covered in snow.

It is no surprise to me that eating won out! Thankfully I had some healthy food to put together. For the last couple of days I have been eating much of the same thing for dinner and today I finished off most of the ingredients in my lunch. I made a post run turkey salsa wrap:

The ingredients for this wrap are so simple and they go so well together:

Ground turkey

salsa

Romaine lettuce

refried beans (fat free)

scallions

reduced fat cheddar cheese

Then I added two of my favorite ingredients:

Hot sauce and Trader Joe’s Reduced Guilt Chunky Guacamole. <— I love this stuff! Trader Joe’s makes this guacamole with plain greek yogurt and it has 50% less fat than regular guacamole. I would have just bought avocado the day I was picking up ingredients for these wraps, but there were not any ripe ones available – I was secretly thrilled that I had an excuse to get this chunky guac! I used Trader Joe’s Habanero Lime Flour Tortillas as my wrap. It is marked as a hot tortilla – so if you don’t like spice you might want to stick with their whole wheat choice!

Everything wrapped up well (but I always end up needing a fork while eating one of these creations). It was a deciduous reward after my treadmill workout.

After eating I showered, got my laundry and stretched out and used my foam roller. I’m doing my best to avoid injuries this year and foam rolling really helps me feel better and avoid injuries – fingers crossed it keeps working!
