Hi Everyone –
I am a day behind, I know. Here is the low down on Tuesday’s food. I was excited to have breakfast at home once again – two days in a row was quite an accomplishment! I had a bowl of Kashi Vive (I love this cereal!) with 1% milk, and a cup of coffee while I got my morning politics fix.

For the past week I have been getting to work anywhere between half an hour to forty five minutes later than normal and I hate it! Yesterday I was finally able to get to the office by 8:15 – which is close to my usual 8am arrival – but not quite. Still, it was an improvement!  When I get to work at 8 I can leave at 4:30 in the afternoon – it helps on so many levels (with traffic, with getting to the gym before 5 if I’m lucky!) and lately it just hasn’t been happening for me. I just cannot get myself out of bed in the morning – I think it has to do with the fact that it is pitch black out when my alarm first goes off… ahh winter.

For lunch yesterday I had a Teddy peanut butter and jam sandwich on two pieces of Arnold’s double fiber bread. This stuff is really great. However, I have been trying to snag a loaf of Arnold’s Double Protein bread – and when Ben and I went to the grocery store on Monday the store only had two loaves left – and neither had a readable “sell by” date. So we ended up with the fiber bread instead.

I have to say – this sando was sooo good!  I also had a great clementine and a combo of TJ’s plain Greek yogurt with peanut butter puffs, almond slivers, and a couple of semi-sweet chocolate chips (that was dessert!).

When I got home from work at around 5pm I had a snack of Kashi whole wheat crackers  –  about seven of them. Then I got ready for the gym!  I was so excited to get to the gym two days in a row, especially during the holiday season. Next week is going to be crazy busy – but this week I am doing a pretty good job of fitting the workouts into my week nights.

Once I got to the gym, I discovered that I forgot my Sigg water bottle at home. Disaster! I still ran 1 mile, jogged 1/2 a mile and walked 1/4 of a mile on the treadmill though… not too bad considering my addiction to water.  After 25 minutes of cardio, I did weights for 20 minutes. I worked the hamstrings and quads and then did ten minutes of arms.  The workout was not quite as long as I wanted it to be – but I was happy with it overall.

Once we got home it was time to start thinking about dinner. I cannot believe how quickly this dinner came together – it was totally impressive! I quickly made some TJ’s frozen nan in the oven while boiling water for a curry cous-cous mix. While this was all happening I thawed and pealed ten shrimp…  I cooked the shrimp in a little bit of water and a tablespoon of EVOO and while the shrimp were cooking I added a couple of spoon fulls of curry powder.  This added great flavor to the shrimp! Here is the end result:

Wow! Was it good. I needed some veggies, for sure. But with all of the other elements to the dinner going on at the same time, I totally forgot to cook the broccoli I was planning!!

I did go back for seconds on the cous-cous. I love curry cous-cous! But after the gym, I thought I would be famished after this meal. I wasn’t. I didn’t even have a dessert after. Wow.

Ok – I have to run. I’m heading out to the gym for my FIRST EVER  spin class. I am super nervous about this. I have been a member of my gym for over a year, and I have never taken an official class there!! I’m afraid I might be late – so I must sign off and go.

    1. Hi Nlo! You’re the best commenter around 🙂 So the curry cous cous is by Near East. It’s the easiest and best thing ever! It usually is ready within 10 minutes – start to finish. Pefect side dish to go with a protein and veggie!
