A re-cap of yesterday

Monday was Day 1 of my two day work week. It was a huge help that I packed my lunch the night before – and I was able to get to work by 8am on Monday morning.

Getting to work at 8am  is an important and  great set up for a productive day.  When I get to work at 8am I am able to leave work by 4:30 and get to the gym by 5pm.  🙂

Anyhow.  On Monday I had a piece of Amish Friendship Bread for breakfast. I love this stuff, by I think I have over dosed on it  –  is that possible?  Tomorrow (Wednesday) I am definitely going back to my good ol’ oatmeal!

For lunch on Monday I truly enjoyed my first serving of Amy’s Tuscan Bean & Rice soup .  I also enjoyed carrots, and Kashi 7 grain crackers with Roasted red pepper hummus.  (I do apologize – these photos are just not beautiful!)

This lunch kept me going for quite a while – and I did not have my afternoon snack until 3:30 in the afternoon. The PM snack was my new favorite combo – a Chobani Vanilla Greek yogurt (click for nutritional info) along with Trader Joe’s high fiber cereal. Monday was the first day I took the cereal to work – and I love it! It has 12 grams of fiber per serving – wow.  And by now – most of you know how much I love my Chobani. The vanilla is definitely my favorite.  Between the fiber and the protein from the yogurt (16 grams!), it’s a very filling snack!

At 4:30 I left work and went straight to the gym.  I love having Ben’s mom visiting with us – but I felt horrible going to the gym after being gone all day at work.  I did 35 minutes of moderate to vigorous exercise on the elliptical machine and that felt great. It was a quick but productive workout – and I was home by 6pm!

Ben’s mom had decided to make dinner for us on Monday night – and we were treated to my favorite of her recipes!  I call it the cornbread casserole – but I think the official name is taco bake. It has cornbread, salsa, and lean hamburger all baked together… and it is so good!  I had a serving of fruit salad and fat free sour cream (for the casserole – not the fruit!) for dinner and it was wonderful.

Monday night was full of good food – and thankfully some good exercise!
