The rest of Saturday

Happy Saturday, everyone!

Ben and I sort of had a busy day at home and running errands. We went to Target for the first time in a few months (quite an accomplishment, I think!) to pick up a few household items. We went home and cleaned the house, spent a little bit of time outside walking around (it has been over-cast all day and looked “threatening” most of the day – not a good day for hiking, I guess).

It was about 2:30 or 3pm before I started thinking about lunch. A few options went through my head. The first thing I settled for was half a piece of whole wheat pita with a bit of TJ’s all natural peanut butter (for those of you looking for a good brand of peanut butter – Trader Joe’s makes a great one!)

For lunch I settled on a Trader Joe’s chicken tamale… it was really good and filling:

On the side was salsa and a little bit of  fat free sour cream.

At around 5 o’clock I drove down to Rhode Island to spend the evening with my mom. We made a great dinner of lemon butter chicken and an amazing salad. Unfortunately we were without a camera, so the dinner went without documentation, which is really sad because it was beautiful!

The chicken was amazing because it was chicken breast on the bone, which I never prepare on my own… I am always making boneless chicken breast because I think it is easier (I think I am right about this!) but chicken on the bone has so much more flavor!  Maybe one day I will try to make chicken this way.  But here is what my mom did:

Melted 1 1/2 tablespoons of butter

Once melted, stirred in the juice of one full lemon

Two chicken breasts in a baking dish

Pour mixture on the chicken

Cooked chicken at 350 degrees for 25 minutes, then turned the chicken and baked another 20 minutes on the other side

For the last 3 minutes we put the chicken under the broiler to get it nice and brown.

YUM!

The salad included green leaf lettuce, tomato, avocado, carrots and red pepper.

I just took some dark chocolate brownies out of the oven and I’m excited to watch the White House Correspondence dinner with my brownie dessert in a little while!
