Week in re-cap

Well, this week I have been the worst blogger ever. Ugh. But I’m going to just do a re-cap of the week.  Luckily I ate the same thing for lunch Tuesday through Friday… how weird is that?

On Tuesday morning I started off the day with an egg white sandwich on an English muffin with melted string cheese. It kept me going all morning:

And in my previous post I talked about the rest of the day (sans pictures)

Tuesday, Wednesday, Thursday and Friday I had pretty much the same thing for lunch: An awesome spinach salad with a hard boiled egg, carrots, and red peppers.

On Wednesday I out the salad on a small whole wheat pita with a tablespoon of garlic hummus… what an awesome sandwich it turned into!

On Wednesday night for dinner I made a pretty good spur of the moment meal! I had a package of ground turkey from my trip to TJs on Monday which I cooked up and then added a marsala and mushroom sauce to it, and let it simmer for a while. The other thing I made was spaghetti, and a spinach salad. Here is what we ended up eating:

It was really good. The protein in the meal kept me full for the rest of the night – no dessert needed!

It was a pretty healthy week of food, with the salads every day for lunch.  Along with the salads I had usually had a yogurt:

And my afternoon snack was almonds, raisins and semi-sweet chocolate chips – the entire mixture was a little less than 1/4 of a cup:

As I said, on Monday my food was different – because I went to Trader Joe’s on Monday after work. For breakfast I had stove top oats, left over from Sunday’s mixture – what a great way to start the week! On Monday I went for a walk at lunch, and before the walk I needed a snack – luckily I had a great pear in my lunch bag. It really hit the spot and gave me the energy to have a great walk:

For lunch I had two pieces of Great Harvest honey whole wheat bread, and I had brought the last of my Teddie Peanut Butter and some organic raspberry jam… But I also had a little bit of hummus. So I put the garlic hummus on one piece of bread and the peanut butter & jam on the other… and ate them as open faced sandwiches. They were good and surpisingly filling!

I had two potential afternoon snacks:

I ended up only needing the apple, and saving the awesome PURE bar for a later day.

Now it is Saturday morning… and today I have had a breakfast sandwich made with two egg whites and 1/5 of an egg yolk that got in there sort of by accident – but it definitely has good vitamins in it… I melted a Trader Joe’s string cheese on a TJ’s English muffin with an accidentally large amount of ketchup! With the sandwich I had a glass of skim milk.

I’m not really sure if this was what I wanted for breakfast this morning, but it was easy and had a good amount of protein so it is what I settled for.

Other high-lights of the week: Thursday night we went to the Red Sox game and witnessed the 12 run 6th inning for the Sox which was awesome. Friday night Ben and I went to see the new Star Trek movie … Ben is a huge Trek fan and obviously loved the movie. I have seem many of the movies with him in recent days, and although I am not a “Trekkie” (?) I have to say that the movie was fantastic! It kept me at the edge of my seat for nearly two hours. The new cast is amazing. It was a great movie.

Ok, I’m signing off for now. It’s sort of overcast and humid… but I think I’m going to get my bike out and go for a ride or go for a run / walk. Will check in later today.
