Hmm… I really thought I had written a blog entry for Tuesday, but I guess that was just wishful thinking!
This week has been so busy but thankfully it is almost over. I’ve worked super hard, and I’m really looking forward to the weekend!
Where to begin, since it’s been a while? Tuesday: I forgot my camera at home and it was the night I had to work the latest. I went to Bread & Chocolate for breakfast because I was running a little late to work. I settled on a cranberry orange scone which was really good. For lunch I had left over pasta salad and a yogurt. For my evening snack, I had a handful of peanuts, raisins and semi-sweet chocolate chips. It was a great snack – and let me work until 8:30 without getting hungry! At around 9 o’clock I was lucky enough to enjoy two slices of homemade veggie pizza (so good!) thanks to Ben’s Aunt Wendy who is visiting us from Germany this week. We had a ton of fun family time after I got home from work.
I was sort of tired from working late on Wednesday, even though we did not have to stay all that late… it sort of threw off my schedule. My healthy eating was a bit thrown off, too because I was out of sorts and always running late this week! Wednesday I had half a bagel for breakfast.
For lunch, Ben made me a peanut butter and jelly sandwich – I think as a thank you for driving him to work, and to speed me up a little bit in the morning. It was a great sandwich, made even better because it was on Arnold’s double protein bread. The picture is not very interesting though…
I also had a delicious apple:
After lunch I went for a ten minute walk – and I was so happy to get out of the building for a few minutes. Thankfully, I did not have to work late on Wednesday. I stopped by Whole Foods on the way home from work and picked up a few special items that will make appearances on the blog soon. After WF I went for a great four mile walk around my neighborhood.
For dinner I had a little bit of pasta salad and a spinach wrap with a Morningstar Vegan burger (12 grams of protein per burger, 2.5 grams of fat, 100 calories), spinach and a little bit of light cheddar cheese:
This was a really great dinner after my long power walk. I burned just over 360 calories during the walk… it felt great! Along with dinner, I had a huge glass of water and a glass of milk.
That brings us to today! For breakfast today I had a slice of Arnold’s double protein bread (I love this stuff!) with a tablespoon of peanut butter. I made it until 12:30 for lunch with that “small” breakfast!
Lunch was actually a meeting with colleagues, so I did not bring the camera! But I did enjoy a fantastic tomato, fresh mozzarella & basil sandwich – it was also drizzled with the perfect amount of olive oil. It was sooo good and wonderfully fresh!
I was in meetings from 12pm until 4pm this afternoon… and after that I ended up working a little late today as well… but most of the things I need to accomplish this week are done – which feels fantastic. I am sort of low on energy tonight, so instead of cooking or preparing an elaborate dinner tonight, I decided to let the Whole Foods salad and fresh food bar do the job for me!
Here is what my salad, etc. ended up looking like tonight:
The ingredients:
grape tomatoes, spinach (from my fridge – not from the salad bar!), cucumbers, grilled summer squash (so good!), cous cous, corn, chickpeas, hard boiled egg whites, soy ‘bacon’ bits, broccoli, and tofu. I enjoyed this salad without a dressing (no need for one!) but with some toast points that I made from french bread with Earthbalance, and a tall glass of sparkling water.
While I was eating my late dinner, I really enjoyed watching the last half of the Biggest Loser finale – I love this show but I did not love this year’s cast all that much. But I still love watching the finale to see how all of the contestants did. I find it inspirational.
While I had to work a lot this week, I feel like I still did a pretty good job making time for exercise. I kept up with my ab work out on Monday, Tuesday and Wednesday – and got good power walks in on Monday and Wednesday. I am really looking forward to getting back to my workout routine next week. I’m going to pack my workout clothes the night before and either workout in the morning before work, or take the clothes with me to work and go straight to the gym and / or run outside after work weather permitting.
