Hey All-
Hope everyone had a great weekend. We had a super busy one with Ben’s family all in town – it was really fun and we celebrated Lara’s graduation from her master’s program in nutrition.
Last night I did not sleep well at all! I got at most three hours of sleep. Thankfully we had coffee brewing this morning when I made it out of bed at 6:30. I would not have made it to work without the coffee.
I arrived at work early this morning, 7:40 this morning. Once I got settled in I had a low fat vanilla yogurt and another cup of coffee for breakfast (much needed on the coffee!) I had been rushing out of the house this morning and was not able to pack a lot of food for the day…
Thanks to a small oatmeal & raisin cookie at 10:30, I did not have lunch until about 2 o’clock this afternoon – I considered this a victory! At my usual lunch time I went for a 25 minute walk on my own, it was lovely – but a little bit cool, in the 50s.
When I was finally ready for lunch, I had to go to the cafe in search of food. Thankfully I found a pretty good sandwich – roasted tomato, fresh mozzarella, and basil. The sandwich is served cold in the cafe, but I took it upstairs to the staff lunch room and warmed it up in the toaster oven. It was really quite good.
I made it through the rest of the day without a snack, but I did snag a Diet Coke at around 3:30 this afternoon. I am not much of a soda drinker, I stick purely to water through the day and sometimes a small glass of fruit juice in the morning and a glass of milk with dinner. But today, after a busy morning and such a lack of sleep last night, the caffine was much needed.
Because I got in to the office early, I was able to leave a little earlier than I normally do. I went over to REI to pick up a new compass and two maps of the White Mountain region of New Hampshire, in preperation for our camping trip this weekend. It is our first camping and hiking trip of the season and Ben and I are so excited. I’m sure I will devote some of the blog this week to our preperations!
After REI I headed home, and snacked on a small handful of peanuts and raisins (or as hikers call it – GORP, good ol’ raisins & peanuts). This is a pretty good snack for protein and energy. It was a perfect pre – workout snack.
Once I got home Ben and I headed to the gym. At the gym I did weights for 20 minutes and the elliptical for 35 minutes.
After we went to the grocery store for fresh produce to get us through the week. I came home and made a veggie wrap with a Boca burger. I added salsa and red pepper hummus. The veggies were: lettuce, tomato, green peppers, avocado and pickles (which I guess aren’t actually vegetables – but they added a lot of great flavor).
For dessert tonight I’m going to enjoy a half of a cannoli from Mike’s Pastry which we picked up when we were in the North End this weekend.
