Monday – French again?

Hi Everyone –

I do not know where the weekends go to! I had a crazy and fun weekend back in college, celebrating a big Reunion (10 years… what!?) Not only did I have a busy weekend catching up with friends and enjoying campus again, Ben and I also went to a Phish concert at Fenway Park on Sunday night. It is 8:45 PM on Monday night, and I’m sort of shocked that I am still awake!

I’m going to start with today’s breakfast.  Today was a bit of a culinary disaster.  The problem stemmed from not only being away all weekend, but getting home from the concert at 11:30 or so last night. There was literally no time to go grocery shopping!

Thankfully this morning I quickly found a Luna Sunrise bar. I must say that I love these bars! This was a blueberry flavor and it was fantastic!

I had a busy morning catching up on being out on Friday and a morning meeting with my department members. I am so glad that we had a meeting because I did not realize that I was hungry until about 11:30. That is when I went down to the cafe and realized what a foody disaster of a lunch I was about to have.
It was slim pickings in the caf today for lunch. Most of the sandwiches they have are mayonnaise based, which I refuse to eat. I don’t mind making a tuna salad or a chicken salad when I am making it and I can decide how much mayonnaise to put in (if any!) but I do my best to avoid such sandwiches when not prepared at home. Another option was a rare roast beef sandwich. That was so not going to happen! There was pizza, hot dogs, and other hot and not so healthy things as well. After a weekend of eating abnormally, I really wanted something sort of healthy.

I settled on a Stoneyfield yogurt which I ate before my 40 minute walk.

After my walk, I ate lunch and worked at my desk. IT was worth it to have such an awesome walk with my friends Jenny and Katherine. We walked almost three miles during lunch time today!

What I decided on for lunch was a roasted veggie wrap “with hummus”. I did not actually taste the hummus, and I only had one half of the sandwich because the wrap was really soggy and the veggies were watery. Sigh. Oh well. I think by eating the wrap, I got at least one or two servings of my veggies for the day. 🙂

I had a couple of almonds that my colleague had at her desk, and then I bought a small serving of pretzels from our vending machine. 150 calories of pretzels.

I got to work at 8 o’clock this morning and that meant I was able to leave at 4:30 this afternoon. Thankfully I had packed my gym bag this morning, so I was able to go straight to the gym. At the gym I did 20 – 25 minutes of weight training and 20 minutes on the treadmill where I did a run / walk and just under two miles. Combined with the 40 minute walk today, I feel like I finally had a day where I got a good amount of physical exercise! What a great feeling! 🙂

Considering the lunch disaster today, I was hungry for a good portion of the day and that got me to thinking of what I was going to make for myself tonight for dinner….

Oh yes, myself. I am without my other half this week! Ben is in New York for the next few days for work 😦  and he’ll be back on Saturday.  I can’t wait to see him already!

So,  back to my dinner creation. I decided that a quiche might be a good option because I could have it for lunch and / or dinner this week.  I spent some time thinking about how I could make a quiche a little lighter and healthier. I think I came up with a recipe that works pretty well.

For the cheese I used the 50% reduced fat Cabot cheese, cheddar (just under two cups). For the eggs I used one whole egg and three egg whites. Instead of cream I used a mixture of 1% milk and whole milk about 1 1/4 cups total.  For the quiche filling I steamed broccoli, diced up red peppers and cooked 5 pieces of turkey bacon! It came out really well! Oh, of course I added spices – garlic, onion, cayenne pepper and ground red pepper. NO SALT NEEDED due to the turkey bacon… it is a little salty.

The quiche cooked for 48 minutes at 350 degrees. I did not get the quiche in the oven until 7:15 and after the gym, I was starving!! Here is the snack I had while the quiche cooked:

A few pita chips and a tablespoon of roasted red pepper hummus with a glass of light soy milk.

At 8 o’clock I was finally almost ready to eat dinner! I made a salad to go along with my piece of quiche:

When serving quiche, I do recommend letting it sit for about 10 – 15 minutes when it first comes out of the oven. As you might be able to tell, I really did not want to wait, so my piece was a bit crumbly. But it was really good. 🙂  Oh, and on the side, that is ketchup. I know… I’m weird!

That about wraps up my day. Thankfully I’ve already packed my lunch – a small piece of quiche and a salad. My goal is to wake up around 6 o’clock tomorrow and go for a jog before work. I really want to do it – and the weather is supposed to be really nice. I’ll report back tomorrow and let you know if I make my goal!
