Hi Everyone!
This weekend one of my best friend’s from college came to visit me and she inspired me to get back into the blog because she is one of my loyalist readers!
This morning (Sunday) I had a pretty simple breakfast of whole wheat toast with almond butter and blackberry jam and Stoneyfield yogurt with granola and ground flax. It was a very filling and satisfying breakfast – I made the same thing for Gillian and my mom and we enjoyed our breakfast out on the deck with the beautiful flowers in the backyard…

I realize I have already mentioned this – but the most recent almond butter I purchased from Trader Joe’s is amazing.
A while after breakfast, I had to take Gill back to the bus station so that she could go home. It was really sad to have her leave – but we’ve made plans to get together again really soon 🙂
After dropping Gill off I had lunch with a friend and my mom. We made chicken salad sandwiches with grapes and tarragon. We also sliced up some beautiful tomatoes (I had orange and yellow ones on my sandwich). This was a great sandwich and it made me think of summers on the Vineyard… this is a sandwich I used to bring to the beach a lot back in the day:
The sour cream and onion chips were the perfect match to this sandwich. What a great lunch! I think it was ultra special since I don’t usually indulge in croissant and potato chips very much 😉
After lunch I really did not think I would need dinner – but mom and I decided to take advantage of Sunday night to make a meal that we could have for the next couple of days. We had recently seen a recipe for “light” Turkey Sloppy Joe’s… tonight we gave it a try – and it was a success!
We diced onion, green pepper and garlic and cooked these together in a tablespoon of olive oil. Then we added the turkey (just over a pound). Once the turkey was cooked we added 1 1/4 cups of low sodium tomato puree, two tablespoons of ketchup, 1 tablespoon of Worcestershire sauce, one tablespoon of brown mustard and 1/4 cup of Annie’s bbq sauce! Tomorrow I’m going to type up the recipe – because I can’t find it on line at the moment!
Wow – I feel like this was a lot of food for one day… I definitely got most of my protein in eating both chicken and turkey in one day!
