Breakfast

Sunday night…

Hey All –

I hope everyone has had a great weekend. I don’t know about you, but my weekend went by uber quickly. 😦 I cannot believe it is Sunday night already! This weekend was filled with a few fall time rituals – tomato soup, making an apple pie, watching football and playing football – fun times.

Yes, this weekend I made an apple pie with friends. In my usual ‘mad baker’ ways, I threw together the apple pie and then decided to look up a recipe on-line to see if I was making any key ingredients… glad to say I eyeballed nearly everything and it turned out really well! I was not really in a picture taking mood this weekend, so I do not have much to show for my handy work, but I think it turned out pretty good. We definitely used Pillsbury pie crust, and I had help slicing and cutting the five apples that went into the pie. I added 1/4 cup of sugar, a good amount of cinnamon, pinch of salt, several “shakes” of nutmeg, one or two teaspoons of vanilla and stirred everything around before dumping it into the pie crust. Yum. I love apple pie!

As you all know, I think that breakfast is one of the most important meals of the day. Most of the summer I was having either overnight oats or yogurt for breakfast… this week however, my stomach was turning at the sight of yogurt in the morning. This was sooo weird, and I really did not know what to do when it first happened on Monday. That day I did not have breakfast – what a mistake! Not having breakfast made me feel very sick, and it was really hard to get back on track for the day. By Thursday I had figured out that I should eat carbs for breakfast – ie english muffins, toast, etc.

English muffins and toast are seriously saving my life right now! I think this week I am going to make the switch from overnight / cold oats to hot oats now that fall is in full swing. I have missed true oatmeal the last few months, so I will be glad to have it back in my daily routine.

Well, I hope everyone is enjoying October so far. This week I really hope to be back to the blog on a more regular basis.
