The last few days…

Hi All –

I hope everyone is having a great weekend! I am having a nice and rather restful weekend, myself. I did not end up coming down with a cold, even though I had a really sore throat on Wednesday night. I had a lot of tea with honey, a lot of extra Vitamin C, a little extra sleep and I woke up Thursday morning feeling better.

On Thursday morning I had half of a muffin for breakfast that my mom bought for us to split at Whole Foods. I was amazed that the muffin half kept me going until 12:15…

Yum – this muffin sort of made me feel like I was eating cake for breakfast which is always a fun thing to do! 🙂

For lunch I had a staff meeting, after a couple of hours of meetings in the morning, too. I was able to grab a cup of chicken noodle soup from the caf at work before my meeting. I put freshly ground black pepper in the soup, and had two saltines with it as well.

Thursday was my last day of work for the week – woo – hoo! I had dinner with Mark on Thursday night, we made another quiche and it was fantastic! Cheddar cheese, three eggs, and a little over a cup of milk. The filling was cooked broccoli, red onion, mushrooms and a little bit of bacon (two strips diced up). Here is what it looked like before we put it in the oven:

I put some hot sauce on after the photo was taken. This quiche was seriously good. Usually I do not put as many ingredients into my quiche (I usually stick with two items after the cheese, milk and egg mixture) but I really liked how all of the flavors went together.

Friday I slept in – which really was fantastic after such a long week. I had French toast for breakfast, and a couple of pieces of apple and peanut butter (one of my favorite snacks since I was a child!)

The french toast was made with sour dough bread, a bread which is sooo perfect for this breakfast meal! I had about two tablespoons of syrup on top, too. 🙂

After breakfast I went to take care of some holiday shopping! I walked around the mall for a couple of hours, getting a few things on my list taken care of. I also did a little shopping for myself 🙂 After walking around the mall for a bit, I went to the gym and I ran 3.25 miles. It was one of those weird running days. When I first got to the gym I really wanted to run four miles or more. When I first got on the treadmill though, I could tell it was not going to be a great day. I wanted to stop running at 1/2 a mile… but eventually I got myself past the three mile marker, which is always a good thing. I did not feel like doing weights or core, so I left the gym after the run.

By going to the gym on Friday I did accomplish my goal for the week – running three times this week! That made me pretty happy.

Friday night I had chicken noodle soup with whole wheat noodles, and extra chicken. It really hit the spot, especially considering it was just about 20 degrees on Friday night – a perfect night for a hot soup.
