Hey All –
Today was one of those super busy days at work. I did not photograph my food. For breakfast I had a cup of coffee with skim milk on the go, on the train. I was planning on having breakfast on the bus, but was able to eat my Kashi granola bar as I was getting settled in to work for the day. I love Kashi granola bars. I also love being busy at work with stuff, because I do not get hungry until lunch time.
At lunch I went to Au Bon Pain with two of my colleagues. I was so happy to see that ABP posted all caloric information on their food choices. It really made my day. I had packed my lunch, so I only needed one more cup of coffee to get through the rest of my day.
Lunch was a tuna sandwich with spinach on sourdough bread and a few Kettle salt and vinegar potato chips. What an awesome lunch! I felt like I was picnicking on the beach. 🙂
My afternoon snack was a bit of granola, greek yogurt and berries – sort of like yesterday. I snacked on three strawberries separately (they would not fit in my yogurt container) and mixed the blueberries and blackberries in. Best. Snack. Ever.
After work I was going to take the bus to the train station. It was drizzling, and I felt like I was living in the UK again… As I walked to the bus stop, two buses passed me by. Ugh. I decided to walk to the train station in the rain, because I was not going to wait however long it would take for another bus to pass by. Even though it was cold, the type of cold that goes right to your bones, the 1.2 mile walk to the train station warmed me up. Thankfully I had my awesome marmot rain jacket on, and an umbrella, so when the rain drops really started hitting the pavement, I did not get too drenched.
I knew I was going to make a Bittman recipe when I got home. That sort of made the train ride seem super long. Y’all know that I love Mark Bittman. Love him. I have yet to make a recipe of his that I do not care for. I hope I never do.

Bittman’s Pad Thai Recipe – 2010 (a little different than the one in How to Cook Everything)
Tonight I was making his Pad Thai recipe that was published in the New York Times last week. I did not happen to have a lime, I did not happen to have cilantro and I have yet to find tamarind paste. Would you believe that even though I did not have these three ingredients, the meal was still good!? It was! I was a little overwhelmed making the new dish, and by the time I sat down at 7:45 I was exhausted and pretty starving. I didn’t take a photo. But here are a couple of post photos for ya!
Part of the kitchen during the clean up. All of the stuff that could go in the dishwasher did, by the way. I was surprised that even though there was a lot of stuff, the clean up was rather easy.
Mom’s lunch for tomorrow. I’m packing a salad and an almond butter and jam sandwich…
Well, I had a super long day and I am rather exhausted. I’m going to bed. Good night y’all!
