Hey y’all-
Just a quick post to let you all know that I am still out there in cyber space. It has been quite a crazy week or so. After my car accident my body and soul was really thrown off for a while. I am slowly getting back to normal. I have not gotten back to taking photos of my food, and I was definitely eating abnormally for a while. Starting tomorrow I am back on track though thanks to a quick but productive trip to the market today.
Tonight for dinner I whipped up a great little wrap. On a whole wheat wrap I put a cooked gardenburger (black bean type – I love these) with a sprinkle of low fat Mexican cheese blend, salsa, spinach and sour cream. It wasn’t a very big wrap – but it was really good (I could have enjoyed another one easily!). Along with the wrap I had a tall glass of 1% milk. I love milk with dinner, especially if my meal is on the smaller side. I find that the protein helps fill me up, and so I’m a little less prone to eat more or snack mindlessly. 🙂
Last night I made bruschetta for the first time ever! I really wish I had taken a photograph of the final product (and the process, of course!) because it was pretty and it tasted soo good. Here is what I did:
I started by mincing up three cloves of garlic (you can use less if you do not love garlic as much as I do…. it is sooo good for you – keep that in mind!)
Then I diced up 1 1/2 tomatoes. I cut the tomato into really small pieces, and kept the seeds, etc. too.
I dumped the diced tomato and minced garlic into a small mixing bowl.
I added two tablespoons of EVOO into the bowl and mixed everything around.
I added a 1/2 pinch or so of kosher salt and a few cranks of freshly ground black pepper
I really wanted basil in the mix, but I did not have any.
I mixed everything together again.
I cut up 8 – 10 pieces of the freshly baked baguette that I purchased from Dave’s earlier that night. I love baguettes that are WARM when I get them at the market. This just makes my day super special (many of you know how much I love french bread. There is nothing like it. Well, maybe sour dough from San Francisco. That could be my favorite bread of all time, actually.)
I popped the baguette pieces into the toaster oven. Toasted them until they were just slightly brown.
I grated Parmigiano-Reggiano onto the baguette pieces. Stirred the mixture in the bowl one more time, and then topped the bread with the tomato, garlic and olive oil mixture. Grated a little more parm-reg on top, and served. It was really good, and tasted soooo fresh. I cannot wait to make it again soon. I could probably eat it every day. But I will not. I promise.
Well, I’m going to sign off for now. I hope y’all are having a good week. I spent a good deal of the day thinking it was Thursday. How sad, since it is only Tuesday.
Tomorrow night I have to clean and organize my room, it has seriously gotten out of control. I also hope to get to the gym – no running tomorrow since it is going to rain 😦
