The other night I made salmon, asparagus and couscous for Mark and my mom. It was our first official dinner at the new place. The food was fantastic, thanks to Mark making a trip to East Side market earlier in the day.
I was just a tad nervous preparing the salmon, so I looked at several recipes to see if I could come to a general consensus. Mark bought just under a pound of salmon. I cut it into three pieces. I made a sauce on the stove top. First melting three tablespoons of unsalted butter, a tablespoon of Worcestershire sauce, thyme, and the juice of half a lemon. I poured the sauce over the salmon, and put the fish in the oven for 20 – 25 minutes at 375 degrees. I garnished the fish with fresh parsley and lemon. For the couscous I chopped up red pepper and scallions and cooked it all together with the grains. I steamed the asparagus.

I was so happy to have my mom come and visit!
Mark and I both enjoyed dinner (as did my mom).
The salmon was a success – I can’t wait to make it again. Next time I will take better photos, too 🙂
