Hi All – Well, I think the chili Mark and I made was a hit! Mark said that he loved it, and that makes me happy. I love the seasoning we used in the mixture, thanks to our wonderful ATK cookbook. I was a little shocked that it called for 1/4 cup of chili powder (I added just a tad bit less, but it was still spicy!) and I always love anything with cumin, coriander, cayenne pepper and red pepper flakes.
Mark thoughtfully packed a container of chili for my lunch today. To top that off at 5:45 this morning, he was putting garnishes in my lunch bag as well. Amazingly sweet! I had Cabot cheddar cheese, cilantro, scallions, and sour cream to go with my awesome chili. I packed a couple of corn chips to go with things, too.
Lunch today was fantastic!! I am really excited that this chili recipe turned out so well. It is definitely going to be a go to for the winter months…. speaking of which – it was a whopping 34 degrees when I left the house this morning. Yikes!
