Guess Who Is Coming To Dinner…

No one. But tonight was one of those nights where I felt like someone was coming to dinner because we had some good food. I was getting bored, being at home, so I decided to make a small-ish apple pie for dessert tonight. So, I do not have the mini tart pan that I really want, but I made do.

Seriously folks: I made my own dough for the pie!!! I really did not know what I was doing, but somehow it worked! I was pretty proud of myself. I used about 1 1/2 cups of flour, 1/4 cup shortening, a pinch of salt and a pinch of sugar, and about 1/4 cup of cold water… Then I had to add a little bit more butter to cut into the dough… then I added a little more water. Eventually I got it!

I rolled out my dough:

I cut out a piece to cover the bottom of my greased vessel. Then I peeled and cut up my apples into thin pieces:

I put the apples in a bowl and added cinnamon, lemon juice, and a good sprinkle of sugar.

Once I had everything together, my mom noticed my left over dough. She asked that I put dough on top of the pie, because she loves pastry… I obliged:

I put little dabs of butter on top and then placed it in the oven at 425 for twenty five minutes.

After that I made a salad of spinach, tomato, cucumber, carrots and avocado. Then I made dressing with a bit of white wine, apple cider vinegar, dijon mustard, freshly ground pepper and a smidge of sugar.

My mom had made homemade chicken and rice soup the night before, and that was to be our main course. I started with salad:

I then had a small bowl of soup. A few hours later I had a little bit of the finished pie:

The pie was small and cute. It tasted pretty good, too! It took me only about 15 or 20 minutes to put together. Why don’t people have pie more often, I wonder?

That about wraps it up. The chicken soup was amazing. I can’t wait to have more tomorrow for lunch or dinner.
