Well, my Monday turned out to be ok – how about yours? My day was super busy and I worked a long day. I left the house at 6:15 this morning and did not get home until a few minutes after six tonight! The only thing I did on the way home was stop at the grocery store to pick up some bread for tonight’s dinner. More on that later! 🙂
As I said, my drive in to work today was sort of awesome. I had a fear that my morning commute to work would be wrecked with snow, ice, and crazy drivers. I was so thankful to not have any of that on my way to work! It made me so happy. I was at my desk by 7:15 this morning!
I got around to having breakfast around 9 o’clock I had a Stoneyfield yogurt and about a 1/4 cup of granola mixed in.
I had a meeting at 10:30 that lasted about an hour, so when I got to my desk after 11:30 I was thrilled that it was nearly lunch time! I was really looking forward to my salad and hard boiled egg…
I am so thankful that I made myself prepare salads last night for lunch. I will definitely do the same thing tonight. In the mix: spinach, carrots, red pepper, cucumber and one hard boiled egg that I shelled at the lunch table. On the side, a piece of baguette that had definitely seen better days. I couldn’t eat most of it 😦 The dressing on the salad was a mix of 1 teaspoon balsamic and 1 teaspoon of olive oil.
I could eat a salad like this every single day, I tell you!
However, about twenty minutes after lunch I was still hungry. I went downstairs to the caf and bought a small soup. The soup of the day was Italian wedding, which has tiny bits of pasta (pastini maybe?) and baby meatballs, chives and spinach. The caf version has a lot of salt in it, but if you can get past that – it’s quite good 🙂
I also have to tell you that I had the most amazing piece of chocolate cake at 2:45 this afternoon! We were celebrating an intern’s birthday – and the cake was fantastic.
For dinner tonight my mom decided we were having BLTs. We need a taste of summer, and to me, a BLT is the most quintessential summer sandwich! My BLT was piled high with spinach and tomato and four pieces of amazingly crunchy bacon on whole wheat, double fiber bread with mayonnaise. Holy Yum!
That about wraps up my culinary day 🙂 I’m exhausted from a long Monday and will be hitting the sack early. I hope you all had a great Monday, too.
