Wow, did I come up with a winning dinner tonight! This falls into the category of ‘dinner for one’ yet again. I do not think this is actually a frittata, but it is sort of what I was envisioning.
This dinner was a winner for a couple of reasons. One reason is because it had a lot of my favorite ingredients:
eggs
mushrooms
scallions
red peppers
mozzarella cheese
baguette
First, I chopped up some vegetables. Scallions, mushrooms, and red peppers. I sauteed the veggies in some unsalted butter. 🙂
Then I added two eggs, which had been whisked and seasoned with freshly ground pepper and garlic.
The pan was hot so the eggs started to cook quickly. Then I sprinkle some cheese on top, and popped the skillet under the broiler for a few minutes. While the eggs were cooking, I popped a couple of pieces of baguette into the toaster oven. Things came together really well:

I seasoned the eggs with hot sauce – delish! I served myself half of the ‘frittata’ first and then I went back for the other half 🙂 I now realize that I was starving most of the day, but I was too busy to realize it. So this amazing dinner really made up for my lack luster day of food. I love dinners that do that!
Tonight I am watching the movie The Switch with Jason Bateman. I love JB – but I’m not sure what I think about the movie yet. I hope you are having a great Thursday night!
