Super Food Breakfast

Good morning, everyone. I am feeling so much better (so far) this morning. I finally slept really well, and this morning I actually woke up a few minutes before my alarm went off at 8:35. I stayed in bed for a few minutes watching Robert Redford in MSNBC talking about the new movie that I am really looking forward to seeing – The Conspirator. I love Robert Redford, it was a special treat to turn on the news and see him talking first thing this morning.

Once I got my Redford fix, I started thinking about the weather and breakfast. It is seriously dark outside, and it is raining. My friend Ned amazes me a lot of the time, and today was no different – apparently he went out for a run in the rain. I am so not doing that. 🙂 I decided to make breakfast first, throw in a load of laundry, enjoy my morning coffee and then go to the gym in the late morning to get my run on – the treadmill will have to do today.

My breakfast this morning was a combo of a few different super foods. First, we can discuss the oatmeal.

1/4 cup oats

1/4 cup 1% milk

1/4 water

1 teaspoon vanilla

1/2 tbs chia seeds

1/2 tbs ground flax seed

small handful of raisins

cinnamon

small sprinkle of brown sugar

1 spoonful of chunky almond butter

Can you see the chia and flax in the oats? The additions really bulked up the bowl. I really enjoyed this breakfast. I did not have oatmeal over the weekend at all, and I missed it sort of.

Over the weekend I did go running on both mornings – we had such beautiful spring weather. On both Saturday and Sunday I woke up, got dressed in my running gear, and bit the pavement and dirt. I don’t know about you, but I cannot eat much before I start running. So on both mornings I had a GU to get me started and after my run I rehydrated with coconut water and H2O, and ate a banana.
