I totally deserve this weekend!! 🙂 This work week was long and busy. I am so glad to be off for two days.
Last night I took advantage of the fact that I had no plans, and went to the gym after work and somehow found the energy to do some speed work on the treadmill for 3.1 miles. I got up to a seven minute mile for 1/4 of a mile. It was awesome! I love speed work outs – they are so fun, and the miles tick away pretty quickly as you are running. I also love my walking breaks during the lower speed intervals (even though they do not last long!).
On Thursday I left the house at 6:15 in the morning and did not get home until 6:30 PM. I didn’t even make it to the gym, that was just my work day! I was not feeling creative in the kitchen for dinner, but I was fairly hungry. Thankfully I had Annie’s Mac & Cheese (deluxe!) in the pantry. I spiced it up my sautéing some red onions and two cloves of garlic, which I added into the final product. I also steamed a cup and a half of broccoli and added that in to the mix. I added the cheesy pasta and vegetables into a casserole, topped it with panko bread crumbs and then baked it for a few minutes. Holy goodness. I loved this dinner – it was so perfect after such a long day. I topped the mac & cheese with hot sauce!!
This morning I set my alarm so that I did not sleep the whole morning away. I just finished enjoying another bowl of crazy super food oatmeal (flax and chia seeds included – did you know that some consider cinnamon a super food, too?) It was crazy good – my body was definitely craving oats this morning. (As well as a big mug of coffee – yum)
I am signing off for now – it would not be a Saturday morning if I was not already running late. Gotta get ready for the farmers market! See you later today.
