Wow, after this long weekend it certainly feels like summer is here to stay. We had hot, humid weather that was more like the middle of August rather than the end of May. The menu at home has also swung into total summer gear which is pretty great. On the menu this weekend:
Grilled Burgers (beef and veggie)
Grilled vegetables (onions, zuchini, summer squash, & all sorts of peppers)
We used the grill on Saturday and Sunday nights and had grilled left overs on Monday. The dinner plates every single night were beautiful. The vegetables added so much color, and each meal was pretty well balanced. There was a protein, a carb and fresh produce at every meal which made me very happy.
I have gotten my week off to a good start. Last night I prepped a salad with spinach, romaine lettuce, peppers, scallions, tomatoes and the remainder of the grilled chicken.
Last night I also measured out all of the ingredients for two smoothies this morning. It made such a difference to have such an amazing breakfast on the road this morning.
Smoothie ingredients (for two smoothies):
2/3 cup plain yogurt
1 big handful of fresh blueberries
1/4 cup milk
2 handfuls of ice
2/3 scoop protein powder
1 T PB2
1/2 T chia seeds
1/2 T ground flax seeds
1 T Amazing Meal
Such a yummy smoothie. I’m curious to see how long I can get through my day before I start getting hungry 🙂
