Cooking Vegetables

Hello there readers.

Just a quick post to let you know that I am still alive. I am not pleased, but I am here.  Recently I have started working on cooking vegetables since I am no longer allowed to eat a lot of raw vegetables – boo.

But I must say that I have done ok for myself over the last couple of days. When the word came down from my doctors that I had to start cutting out raw vegetables, I really did not know what I was going to do. I ate pasta three times in six days – and I got sick of it quickly. I never thought I would say that I was sick of pasta – but it happened.

On Friday night I went to the gym and then went to East Side Market and bought some spinach, mushrooms, and red pepper. I decided  I was going to cook up some veggies if it was the last thing I did. I could actually feel a change in my mood from not eating fresh produce – and it was not a good change. I was feeling uber cranky and unhappy.

I got home after a long day, a long week and I was starving. But I threw together a pretty darned good dinner in not much time. I whipped up some cous-cous and sautéed some vegetables in a pan. We already had chicken, and I threw it in once all of the vegetables were cooked. It came together nicely:

Over the weekend I finally got to Seven Stars!!! I had been craving a ginger biscuit for weeks now but I just never made the time to go over to the bakery and sit down and enjoy one.  The wait was worth it! On Sunday morning AFM and I went over and got great cups of coffee and breakfast. We sat down and enjoyed our treats while discussing the state of the world and politics. It was such a perfect morning. After our breakfast we went for a nice walk through the local park – it was a beautiful day.

My ginger biscuit was just wonderful:

We had a butternut squash at home that needed to be cooked. During football I cut open the squash and roasted it in the oven for about an hour. I was planning on making butternut squash soup. I changed my mind halfway through.  I will write more about this process soon – I even remembered to take some photos… we ended up with butternut squash gnocchi on a bed of sautéed spinach and garlic. It was quite the meal for a Sunday night dinner!

Anyhow, that about sums it up for now. I’ll write more soon about the challenge of redesigning my entire diet soon. But as you can tell I am managing so far.
