Breakfast · Lunch

It was a dark and stormy night…

… and I am sitting on the couch, drinking tea and reading my book in front of my fire-place.

I am not going to lie, it’s pretty great right now. But I do feel guilty for not going to the gym.

But honestly? It is pouring rain right now, and I’ve done two days in a row on the treadmill. I just couldn’t do it again.  So I have a gym day scheduled for Friday and a long run on the books for Saturday. I’m really looking forward to Saturday – it’s been a long while since I have been on a long run around the East Side.

I had a pretty amazing breakfast this morning!! I ate it a few minutes after 7 o’clock this morning and I did not feel the need to eat again until lunch at 12:20 this afternoon!

I love bagels, peanut butter and bananas – and they go really well together:

Delish.

Today was one of those crazy days. The only time I sat down after 8 am was for 1 meeting at 10:30 and for a few minutes at lunch time. I was so hungry that I actually ate my lunch as I walked from the microwave back to my office. Shh, don’t tell anyone – I am so embarrassed by my hunger sometimes!

Lunch was left over spinach pasta, chicken sausage, sautéed spinach and a little tomato sauce. It was fantastic and basically looked the same as the picture I posted last night 🙂 well, not quite as pretty.  On the side I had carrots and humus.

I had an afternoon snack at 3 o’clock which I once again ate on my feet. But the Greek yogurt never tasted so good! I am glad that my lunch and snack had a decent amount of protein in them, for a total of about 35 grams of protein. NOT BAD for someone who is such a slacker in the protein department 🙂

When I got home, I needed another snack (at 5 o’clock). More carrots, humus and a couple of small  pieces of french bread.

On the menu for tonight – Annie’s mac & cheese. I am going to make it, bake it and add sautéed spinach and bread crumbs to the mix. More on that later!

OK, back to my book. I hope you all had a great day! See you in a bit.
