Dinner

Low Key

Well, I’m having a pretty low key evening – but I am ok with that. I have been doing (much needed) laundry, I made a good dinner, watched some Food Network, and soon I’m going to read my Stephen King book.

Dinner was a nice post – run and pre – run meal. Whole wheat pasta, sautéed spinach, chicken sausage and tomato sauce. It hit all of the bases – carbs, a little protein, a little additional fat from olive oil and veg from tomato sauce and 1 1/2 cups of spinach.  Oh – and I garnished with some freshly grated Parmigiano-Reggiano cheese on top.

I made some extra whole wheat pasta, so I might be having something similar again tomorrow night for dinner.

PS: I am totally craving the Whole Foods peppermint ice cream I have been enjoying all week – but I am trying to resist ! 🙂
