Hi there, everyone! How was your Monday? My Monday was not all that bad. I got up early and was pretty organized for the day, so it all started off pretty well. I got to work on the early side. I packed my soy milk so I was able to brew a mug of coffee once I got to work – that always helps my morning!
Breakfast was the same as it has been for the last few work days – an English muffin with Teddie peanut butter. I forgot to pick up bananas, so it was just the straight muffin with PB. I had a mid – morning snack of Chobani 2% Greek yogurt – my favorite flavor, banana strawberry.
Even though there was rain in the forecast, Colleen and I went for a great walk at lunch today! I was so thankful to get outside for some exercise and fresh air in the middle of the day. I cannot tell you how much I love taking walks at lunch time – and I totally think that businesses should give their employees an opportunity to go out for a walk every single day (even if it’s just for 15 minutes or so!) It invigorates you and instead of falling asleep after your lunch, you could feel re-engergized.
Late last night I decided to make a run to the grocery store because I realized we were fresh out of Greek yogurt at home… I picked up a ton of greek yogurt and a couple of Amy’s burritos in case I am in a pinch for lunch this week 🙂 I also randomly picked up this little frozen thing:
The wrap was 220 calories and had a good amount of protein (14 grams) with three grams of fiber and it was low in fat. I actually really liked the wrap. It did not have quite as many vegetables I would have liked, but it did have a fat free mozzarella cheese that gave it a little something special. I would buy this wrap again – but I do not like to incorporate these pre-made things too often into my daily routines. (It worked out really well in a pinch though!)
After eating the wrap I was still a little hungry (probably from my great walk!) so I had a small handful of almonds (10 to be exact). I did not need another snack. Because I got to work on the early side, I was able to leave at 3:55 this afternoon. It makes such a difference when you can leave so early – I headed right to the gym. I quickly did a 35 minute workout on the elliptical machine at a resistance varying from 8 – 10.
After I finished up at the gym, I ran over to the market to get my things for dinner. I knew what I was going to make tonight – chicken quesadillas!!! I was sooo excited for this meal. What is up with Mondays and me wanting quesadillas?? So strange. This is the second Monday in a row that I wanted to make these – but it’s the first time that I actually did.
So, during dinner I was a horrible blogger. I was starving so I just worked really hard to prep the food and prepare everything for mom and me. I was so excited to eat. I picked up a few things at the market. Fresh cilantro, scallions, Cabot 50% reduced fat cheddar cheese, naked grilled chicken (I love that my little market offers this – it is such a time saver!!!)
The chicken quesadilla had grilled chicken, cheese and fresh scallions. There were three sides to go with the quesadilla. A black bean spread, peach salsa, and my now famous yogurt sauce with fresh cilantro, hot sauce and lemon juice. Mom loved this sauce, too! Here is what my plate looked like:
I almost forgot how much I loved meals like this! I love making Mexican at home because I can make what I want super fresh and as healthy as I want it to be 🙂 (I only say that because I definitely had some tortilla chips on the side – lime flavored and they went so well with the yogurt sauce, salsa and black bean spread!)
Well everyone – I had a rather tough week last week so I am really trying hard to get organized with food, clothes, and workouts so that I can have a less stressful week ahead. So, once I hit publish I am off to pack my gym bag, decide what’s going into my lunch bag for my work food and I need to put my clean laundry away and decide what I am wearing tomorrow. I realize that as long as I pick out my outfit the night before, pack my lunch, my work bag and my gym bag all the night before I will have a somewhat better day – or at least getting out of the house in the morning is a little easier!
