Remember when I used to post things on a daily basis?? I really hope to get back to those days soon! It has been one week since my last post. I promise to try really hard to get better about this!
Last week I did a good job about getting back into training. I went to the gym three times during the work week. I walked around for four hours on Saturday and on Sunday I took a 4 1/2 mile walk!
This week I have not been quite as good about working out. Monday was a marathon day at work and by the end of the day my feet were pretty much destroyed from running around work in heels and then running post work errands in heels… at least I got some exercise, I guess. Tuesday I did nothing. It was a miracle I got home and got into bed by 7 o’clock.
Wednesday was another long day at the office, but it was also a fun day. After work I made it to the gym and biked five miles. It has been raining non-stop here, and I would love to get outside for a walk or a run. (I am so glad that mom and I took a great walk on Sunday before the rain started again!)
Here is what I have been up to. On Monday I had a fantastic dinner of grilled chicken, homemade guacamole (made by me!) sliced tomatoes and the most amazing yogurt sauce. I added 1 small container (5.3 ounces, I think?) of 0% Fage Plain Greek yogurt to the blender. I chopped up a bunch of cilantro, added three teaspoons of Trader Joe’s hot sauce and the juice of half a lemon. I blended everything together and came up with an amazing sauce that I put over the grilled chicken. There was quinoa on the side as well as a bread stick that was baked with olive oil and sea salt. What a random and good dinner!
Every day for breakfast (during the work week) I have been having coffee with 1% milk and an English muffin with Teddie Peanut butter. If I have a banana I slice up half of it and have it with the English muffin and PB and then save the other half of the banana for my midmorning snack:
This week my kitchen is being painted so I have not been cooking because almost everything is moved out of the kitchen for the painters to work. It’s a three day project. Yesterday mom picked up Thai food – an amazing “chicken delight” which is a light and healthy-ish dish of steamed vegetables and chicken. We also had a couple of pieces of (less healthier but OH SO GOOD) scallion pancakes. We both had chicken delight for lunch today, too.
After the gym I had to pick up dinner – something that did not need to be cooked. I opted for burritos from Cilantro’s which is on my way home from the gym. I had half of my burrito:
If you have been reading the blog for a while, you might remember my thoughts on burritos. They get a bummed rap from a lot of people. But honestly, every once in a while I think burritos make great dinners! Especially if you think for a moment before you start making your order. I ordered a whole wheat burrito with brown rice and grilled chicken. I added both kinds of beans (half and half – pinto and black, not refried), lettuce, fresh tomato salsa, cilantro, hot sauce, and a little sprinkle of lime juice and cheese. I added other vegetables that I am forgetting, too. I ordered a side of sour cream and a side of guacamole. The side orders were more than enough for mom and I to enjoy the additions on the side of our burritos – and this way we got to dictate how much of each we wanted to have. The burritos were great!
This week I have been trying to read as much as possible. Have you ever waiting for ten years for a book to come out?? I have. And this week it finally arrived at my doorstep:
That is right. The fourth installation of Robert Caro’s brilliant series on the years of Lyndon B. Johnson. I am going to sign off now so that I can get back to my reading! But I do hope to return tomorrow night to tell you all about my day and I’ll give you an update on training. Hopefully I will have something better to report tomorrow – the rain is supposed to stop at some point tomorrow afternoon so I am keeping my fingers crossed that I might be able to get out for a run after work!
