Thanksgiving Count Down

That is right blog readers. We have entered The Best Week of the year – i.e. The Week of Thanksgiving!!! My favorite holiday. I cannot stand it. I love Thanksgiving so much.

I find eating the week of Thanksgiving to be a little bit difficult. I’m concentrating so much on the best meal of the year that I have a hard time cooking and / or being inventive for Monday, Tuesday and Wednesday.

Monday’s Food:

Breakfast: Coffee with milk; 1 piece of Trader Joe’s whole wheat bread and 1 tablespoon of Jiff all natural peanut butter (no, normally we do not eat Jif – but we bought it right before Sandy in case we lost power)

Morning snack: 8 almonds (unsalted)

Lunch: a skim milk latte; jasmine rice, black beans and one turkey meat ball with a sprinkle of cheddar cheese. [can I just tell you that this lunch was bizarre and amazing??? I loved it!]

Afternoon snack: (actually I ate this at 6pm because I worked until almost 7 o’clock tonight) Kashi pumpkin flax granola bar, and a few M&Ms

Dinner: a small bowl of beef stew and half a roll

Dessert: Ben & Jerry’s frozen yogurt

I am currently planning my part of the Thanksgiving menu. I am also making a pre-race dinner on Wednesday night for my family. I am trying to come up with a plan for getting to the market (hopefully all in one trip???) and cooking. I wonder how late I have to stay up on Wednesday or how early I have to get up on Thursday morning to get all of this done and still get to Thanksgiving in time to enjoy hors d’oeuvres and a glass of wine (and great company most importantly!) before having dinner at 2:30 on Thursday.

I’m going to enjoy every second of this while being Thankful for health, family and happiness. I will be reporting back as often as possible on my progress! Stay tuned.

Since I hate posting a blog entry without a photo – here is a picture of mother and daughter getting ready to run the first annual Turkey Trot. I love this photo!
