Veggie Stir Fry To The Rescue!

Wow, it was a seriously long day at work. With the rain, and the never ending hunger, I really thought the day would never end. Well, it was not quite that bad, but it was a pretty bad combo! It is a good thing that tomorrow is another day 😀

Thankfully I had planned out tonight’s dinner yesterday. I did not have to go to the grocery store, a huge time saver. I had all of the fresh vegetables I needed to get my stir fry going. The only thing I should have done ahead of time was cook the brown rice. I started the rice the second I walked in the door, and it was ready with the rest of dinner.

I put some of the vegetables aside for a few lunches later in the week (I am always trying to plan ahead):

The prepped veggies for tonight’s stir fry (and tomorrow’s lunch of veggie stir fry):

I heated up a tablespoon or so of oil, added the red onion and cooked it for about two minutes. Then I added the rest of the veggies, and about a tablespoon of diced ginger root (this makes all the difference in stir fry!!) Then I added about 1/3 cup of water to the skillet. 1 tablespoon of light soy, rice wine vinegar. Things were cooking:

Because I did not have a protein ready for dinner, I added Boca crumble. I am trying to figure out if Boca products are “good” for you… any thoughts? Please let me know. I used to eat Boca burgers all the time as a great substitute since I do not like eating meat often. But I think the soy protein is a bit processed, and I am not sure what the final verdict of the substance is. I do not eat it often, so I think it might be ok every so often.

Here are the ingredients to the boca crumble:

WATER, SOY PROTEIN CONCENTRATE, WHEAT GLUTEN, CONTAINS LESS THAN 2% MALT EXTRACT, SALT, WHEAT STARCH, YEAST EXTRACT, SUGAR, NATURAL FLAVOR (NON-MEAT), DRIED ONIONS, GARLIC POWDER, SPICES.

Well, the final product was really good! Brown rice, stir fry and boca for a bit extra protein.

A really great stir fry with snow peas, broccoli, mushrooms, red and orange peppers, fresh ginger and garlic. I cannot wait for leftovers tomorrow at lunch!
