Sunday

I had a quiet but good day today. I read the paper, had coffee, ate a health breakfast of fruit and almonds: I was thrilled to enjoy blue berries in January. The bananas and cantaloupe were very good and seasonal. I added the almonds for some protein and healthy fat 🙂 For lunch I had…… Continue reading Sunday

Friday Nights are Baking Nights

When I am home alone on Fridays, I tend to bake something. This past Friday I decided to make homemade oatmeal cookies with raisins, dried cranberry and dark chocolate chips. My original recipe makes 4 dozen cookies. Who needs that many!? I unless I am baking for a crowd, I usually ‘half’ my recipes these…… Continue reading Friday Nights are Baking Nights

Plant Based Diets…

Happy Sunday morning everyone! I hope you are all having a relaxing, stress free day so far.  Yesterday I was thinking about former President Bill Clinton (or WJC as I affectionately refer to him), as I was watching the funeral service for Sargent Shriver (one of my personal heroes).  I got to thinking about President…… Continue reading Plant Based Diets…

Wildflour Vegan Bakery and Juice Bar

The other day I paid a visit to the new bakery in my neighborhood. I was so excited to find out that Pawtucket was now the home to at least one healthy and vegan bakery – I was also surprised 🙂 The Wildflour Vegan Bakery is quite cool. If you live in the area, I…… Continue reading Wildflour Vegan Bakery and Juice Bar

If you were a cookbook, where would you hide?

This morning I have searched almost my entire house for a cookbook. It is yet to be found. My mom has started searching, too. I am so annoyed and confused. I just cannot figure out where my new Bittman cookbook has walked off to. I have not even made a recipe from it yet! :(…… Continue reading If you were a cookbook, where would you hide?

Granola Bars…

Ok, so I made the granola bars today! They are pretty good and 100% addictive. I did a lot of chopping. Almonds, apricots, I even chopped up a few chocolate chips… Mixed the apricots, almonds with granola and brown rice cereal. I heated up the almond butter and agave on the stove top until they…… Continue reading Granola Bars…

A Trip to the Market

… I just got home from a trip to the market. My mom needed mayonnaise. My sister requested her favorite salt and vinegar potato chips. I needed brown rice cereal for the Bittman granola bar recipe. We also needed pickles. Such a weird list. I stuck to the list, thankfully. All of this came to…… Continue reading A Trip to the Market

The Final Product

Ok, so the Patriots lost. But at least I had good soup to eat! The soup is garnished with freshly chopped parsley, freshly ground pepper, Parmigiano-Reggiano cheese. I had a piece of garlic artisan bread on the side. I had a chocolate chip coconut nutmeg cookie a little while later. 🙂

Mark Bittman’s Apricot Granola Bars

I am going to try these granola bars soon. I was at the grocery store yesterday, and I walked by the granola bars. I picked up a box and read the ingredients. The list was long and complex. [And this was in the natural food section!!]  As I was reading and frowning, I remembered this…… Continue reading Mark Bittman’s Apricot Granola Bars

Football

When I am nervous I tend to cook and bake. I was (and still am) super nervous today. I do not like it when the Patriots play the Jets. I do not like it when the Patriots play the Steelers, either – but I am taking it one game at a time. I am not…… Continue reading Football
